A soup that will be sure to warm your body and soul on a cold winters day! We’ve certainly enjoyed this in the summer as well, but there is something very soothing and warming about it. It is a solid dinnertime favorite amongst our kids! They love to help prepare it, by first mixing the ground pork with spices to create homemade sausage, and then chopping onions and potatoes with a crinkle cutter. It also smells heavenly as it simmers! I hope your family enjoys it as much as we do.
Ingredients:
1 lb ground pork (pork is our preferred- but ground chicken/turkey would also work!)
1 tsp salt
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp dried smoked paprika
1/4 tsp dried thyme
1/4 tsp dried rosemary
1/4 tsp dried basil
1/4 tsp dried parsley
1/4 tsp fennel seeds
1/8-1/4 tsp red pepper flakes (omit if you or your kids don’t like spicy food)
Fresh ground black pepper to taste
1 TBsp olive oil
1/2 cup chopped yellow onion
3 minced cloves of garlic (or 3 tsp jarred mince garlic)
6 cups of chicken broth
1x can 14oz diced tomatoes, undrained
1-1.5 lb red potato, cut into 3/4″ chunks, unpeeled
4 cups chopped kale (I just use a ready cut & washed bag of kale from Trader Joes)
2 tsp chopped fresh thyme (dried is OK too!)
Method:
- In a mixing bowl, combine the ground pork and spices (salt, garlic powder, oregano, thyme, rosemary, basil, parsley, black pepper, smoked paprika, fennel seeds, red pepper flakes). Mix well.
- Heat olive oil in a large stock pot or Dutch oven over medium heat. Add the pork, chopped onion and minced garlic. Stir frequently, breaking up the meat until browned.
- Stir in the broth, tomatoes in their juices, and cut potatoes. Bring the soup to a boil. Reduce the heat to medium-low/low, simmering covered for at least 20 minutes.
- Add in the kale and the fresh thyme, and cook for another 5 minutes.
- Taste and season further with salt & fresh ground black pepper as needed.
- Serve in bowls, with fresh, crunchy Italian bread like a Paesano to dip with. Enjoy!
