Turmeric Curry

Our kids’ favorite rice bowl – hands down – is this simple and delicious coconut-based curry! I adapted it from this recipe I found three years ago and switched it up a bit to fit our family better – it was an instant hit! Theo really enjoys helping to chop up the onion with a safe-to-us crinkle cutter – this type of kids “knife” has been such a blessing to have on hand. As a note, we usually use ground turkey with this curry to be health-conscious, but it is just decadent with ground pork! I hope your family enjoys it as much as we do!

Serves 6-8

Ingredients:

1 TBsp of oil for cooking

1-1.5 lb ground turkey, or pork

2x 15oz cans full-fat coconut milk (light works, too)

1 small white or yellow onion, chopped

2 cloves garlic, minced

2 tsp curry powder

2 tsp turmeric powder

Salt, pepper

1-2 cups frozen or fresh mix of veggies (some of our favorites: peas, green beans, broccoli florets, sliced carrots, etc)

2 cups cooked brown rice or shredded cabbage

Instructions:

  1. Heat a tablespoon of olive oil (or other cooking oil) in a large, deep skillet over medium heat.  Add onions and garlic, cook for 2 minutes. Add the ground meat.  Saute until partially browned.  
  1. Add the turmeric, curry powder, and salt & pepper to taste.  Finish browning meat, breaking it up with a spatula.
  1. Once meat is cooked and onions are translucent, add coconut milk.  Bring to a boil, then reduce a little, cooking to thicken the sauce over a medium-low simmer for about 10-15 minutes, uncovered.
  1. Add veggies directly to simmering curry, and continue to cook for another few minutes, stirring until veggies are soft.
  1. Serve over rice or shredded cabbage. (Tom & I usually put some hot chili pepper flakes on our bowls at this point!)

** This is a SUPER great recipe for a week-night when you’re feeling busy or overwhelmed by life. Sometimes we just omit the prep like the onion/garlic (it’s still delish – just add a bit of onion & garlic powder to the curry), and just serve it over Trader Joe’s microwavable frozen cooked brown or jasmine rice. Easy peasy.

*** Tom has been experimenting with non-ground meats in this curry (i.e. about 1 lb of cut up chicken breast, or sirloin steak meat) and it is delicious as well!
